Chicken Flautas with an Avocado Lime Sauce

I have another amazing Chicken recipe for you. How do Chicken Flautas with an Avocado Lime Sauce sound? It’s easy to make and tasted like it’s fresh from a restaurant.

I can’t take credit for this one. My husband, who is an amazing cook created this one for me. At first when he said he was going to make an avocado lime sauce,  I was a little nervous. Jason surprised me and it tastes delicious.

The nice people over at Good Cook sent me over an Avocado Slicer for my recipe. It works great. I typically use a knife or spoon out the avocado. This tool works well and makes perfect slices.

Chicken Flautas with an Avocado Lime Sauce
For the Chicken Flautas
  • 2 Large chicken breasts
  • 1 Large onion finely chopped
  • 6 oz. shredded cheese
  • 1 Tbl. Paprika
  • 2 tsp. Garlic Powder
  • 1 tsp. Salt
  • ½ of a lemons juice
  • Zest of 1 Lemon
  • Cilantro
  • 10 Fajita size tortillas
Avocado Lime Sauce
  • 4 Avocados
  • 5.3 oz. container of Greek yogurt
  • 1 tsp. Garlic powder
  • 1 ½ tsp. salt
  • ½ tsp. Black pepper
  • ½ cup Milk
  • ½ of a lemons juice
  • 2 ½ Tbl. Lime juice
  • 8-10 sprigs worth of cilantro leaves
Chicken Flautas
  1. Put chicken in small sauce pan and cover with water. Bring to boil and simmer 8-10 min or until the chicken is no longer pink in the middle.
  2. Remove chicken and shred with two forks. Reserve ½ cup of the cooking liquid.
  3. Add shredded chicken back into the pan with reserved liquid on low heat and add onion and all spices and zest, not the cilantro or cheese, and heat through.
  4. Once warmed through and fully mixed divide mixture across the tortillas, top with cheese and a few leaves of cilantro.
  5. Pre heat oven to 425
  6. Lightly oil or spray a baking sheet. Roll the tortillas tightly and place seam side down on the baking sheet and either lightly brush with oil or spray with cooking spray.
  7. Place in oven for 8 min. then turn them over oil or spray and cook an additional 8 min.
Avocado Lime Sauce
  1. Peel and slice the avocados squeeze the lemon juice over them to keep them from browning and place in a blender, add the lime juice and cilantro.
  2. In a small sauce pan slowly bring yogurt milk and spices to a simmer careful not to burn it.
  3. Pour hot milk mixture over the avocados and blend until smooth. You may need to add additional milk to reach your desired consistency.
  4. Add salt and pepper to taste.
