eMeals Recipe of the Week: Caribbean Shrimp & Rice with Pineapple Slaw
  • Caribbean Shrimp & RIce
  • 8 oz box of Zatarain's Caribbean Rice Mix
  • 1½ lb large shrimp, peeled
  • Pineapple Slaw
  • 2 tablespoons sugar
  • 2 tablespoons apple cider vinegar
  • ¼ teaspoon pepper
  • ½ Cup fat free mayo
  • 8 oz can of crushed pineapple in juice
  • 16 oz bag of shredded coleslaw mix
  1. Prepare and cook rice mix according to package directions; omitting oil and adding shrimp.
  2. Divide into 6 servings
  3. While the rice and shrimp are cooking
  4. Combing sugar, vinegar, pepper and mayo
  5. Add pineapple with juice and toss with coleslaw mix
  6. Divide into 6 servings
If you cannot find Caribbean Rice, look for Zatarain's Yellow Rice
