Italian Beef Casserole Hey Everyone! We are a bit behind and just now getting around to posting the eMeals recipe of the week. We typically post these yummy recipes on Fridays. We've been battling an update issue with our website and it's made it almost impossible to publish blog posts. We have found a way to get some content published, but we're not 100% yet. Hopefully this happens soon. :) Let me tell you about this Low Carb recipe we chose last week. The recipe was Italian Beef Casserole with a Cauliflower Salad. I will be honest and say that I was reluctant to try this recipe. Spinach isn't always my favorite ingredient. The casserole was very easy to make and I whipped this up super fast. Lilly who is five, loved the Cauliflower salad. It came out tasting awesome and it was only 5 net carbs per serving. Even though I was reluctant to make a  recipe with spinach, I was pleasantly surprised at how yummy the Italian beef casserole was. I have this rule for our family and it includes myself. We must always try something before we turn our nose up to it. The recipe made enough for 6 servings. There are only three of us, so we had some left over. I had some for lunch the next day and I must say that the Italian beef casserole actually tasted better on day two. The flavors must have combined a bit more. With that being said, you can make this Italian beef casserole the night before and it will taste awesome. The casserole yields 6 net carbs per serving.

eMeals Recipe of the Week: Italian Beef Casserole w/ Cauliflower Salad
 
Ingredients
  • Italian Beef Casserole
  • 2 lb lean ground meat
  • ½ onion, chopped
  • 1 (16-oz) bag frozen spinach, thawed and
  • squeezed dry
  • 1 tablespoon Italian seasoning
  • 1 (8-oz) block cream cheese, softened
  • 1 (14-oz) can Italian-style diced tomatoes,
  • drained
  • 1 cup shredded mozzarella cheese
  • ---------------------------------------------------------------
  • Cauliflower Salad
  • 1 large head cauliflower, coarsely chopped
  • 3 green onions, sliced
  • ½ cup mayonnaise
Instructions
  1. Italian Beef Casserole
  2. Preheat oven to 350 degrees F;
  3. Ccoat a 2-quart casserole with cooking spray.
  4. Cook beef and onions in a medium skillet until meat is browned and crumbled and onion tender; drain.
  5. Add spinach and Italian seasoning; cook 2 minutes longer.
  6. Stir in cream cheese and tomatoes, pour into prepared dish, and top with cheese.
  7. Bake 20 minutes.

  10. Mix together cauliflower, onions
