Sausage and Spanish Rice w Honey Lime Cantaloupe

Hey everyone!! It's FRIDAY again and that means we are featuring another eMeals recipe of the week. Today we are featuring Sausage and Spanish Rice w/ Honey Lime Cantaloupe. The recipe called for a 10 oz bag of Pictsweet onions, peppers, and celerey which costs - $1.28. Our local Albertsons has Pictsweet vegetables on sale for $0.88 this week so we saved $0.40.  We also had brown rice on hand so that saved us another $0.82. Many of these recipes call for items and staples that are probably in your pantry. This particular recipe cost us $9.43 or just $1.57 per serving. eMeals Recipe of the Week: Sausage and Spanish Rice with Honey Lime Cantaloupe
 
Ingredients
  • Sausage and Spanish Rice
  • 1 cup uncooked brown rice
  • 14 oz smoked turkey sausage, thin sliced
  • 2 (14 oz) cans diced tomatoes
  • 1 cup salsa
  • 1 cup diced onions, peppers, and celery (pictsweet)
  • 1 package taco seasoning
  • Honey Lime Cantaloupe
  • 2 tablespoon honey
  • 1 tablespoon lime juice
  • 6 cups diced cantaloupe
Instructions
  1. Sausage and Spanish Rice
  2. Cook rice according to package directions to
  3. yield 3 cups cooked rice.
  4. Combine sliced sausage, tomatoes, 2 cups of water, salsa, onion/pepper mix and taco seasoning in a stockpot and stir well.
  5. Cook 15 to 20 minutes on medium heat.
  6. Stir in cooked rice then turn off heat and let rest 15 minutes more.
  7. Divide into 6 portions.
  8. Honey Lime Cantaloupe
  9. Combine honey and lime juice; drizzle over cantaloupe and serve on the side.
