It’s time for another eMeals meal of the week. The past couple of weeks have been so busy for us. Lilly finished up Kindergarten late last week. Volunteering, field day, awards day and more filled up my week and this weeks recipe worked out perfectly after a LONG day.

I have an ALDI store right up the street from me and I wanted to shop there this week. My grocery store sales were not great and ALDI saves me every time. I selected the ALDI meal plans for the week. The recipes were great.

My favorite recipe was the Ham and Broccoli Twice Baked Potatoes served with Texas Toast and Cantaloupe. Lilly enjoyed this recipe very much. She loves her some baked taters!! It’s recipes like this that keep us from eating fast food. We were able to enjoy a home cooked meal, that was OH so easy, plus the fresh cantaloupe was amazing. Anytime I get fruits and veggies into my family, it’s a success.

Ham and Broccoli Twice Baked Potatoes
Serves: 2-3
  • 4 medium baking potatoes
  • 1 cup fresh broccoli florets
  • 1 (9-oz) tub ham, diced
  • ½ cup shredded Cheddar cheese
  • ½ cup sour cream
  • 2 tablespoons milk
  • 2 tablespoons butter
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ---------------------------------------------------------------
  • ½ box garlic Texas toast
  • ½ cantaloupe, seeded, sliced, and chilled
  1. Cook potatoes in the microwave on High 10
  2. to 12 minutes until tender. Slice tops off
  3. potatoes, scoop out potato pulp, and place into
  4. a large bowl. Steam broccoli in a small amount
  5. of water until crisp-tender, about 6 to 8 minutes.
  6. Preheat oven to 400°F. Combine potato pulp,
  7. steamed broccoli, ham, Cheddar cheese, sour
  8. cream, milk, butter, salt, and pepper. Spoon
  9. mixture into potato shells. Place on a foil-lined
  10. baking sheet. Bake 30 minutes or until
  11. thoroughly heated.

  13. Bake toast according to package directions.
  14. Serve sliced cantaloupe on the side.
