Lemon & Dill Chicken (Healthy Meal Alert)

I am just on a cooking kick lately. Unfortunately, I’ve been creating some HIGH Calorie dinners. BUT….they have been nothing short of delicious. 😉 – Food makes just about everyone happy, right?? Well, it makes happy. Right along with an ice cold Dr. Pepper or Iced tea.

Last night I wanted to make a more healthy dish and I had thawed out chicken. Chicken is great for healthy cooking. One of my favorite flavors is Lemon, so I found this healthy Lemon & Dill Chicken recipe from Eating Well and it turned out quite tasty. (I added lots more lemon then the recipe called for, because I can’t get enough of Tart & Tasty.

Recipe Adapted from Eating Well



Lemon & Dill Chicken (Healthy Meal Alert)
  • 4 Boneless Skinless Chicken Breasts
  • Salt
  • Pepper
  • 3 tsp of Olive Oil (or oil of your choice)
  • 1 Small Onion Finely Chopped
  • 3 Cloves of Garlic, Minced
  • 1 C of Chicken Broth (Low sodium, preferred)
  • 2 tsp Flour
  • 2 Tbsp chopped fresh dill, divided (I used dry dill and it worked fine)
  • 1 Tbsp of Lemon Juice or more per your taste
  1. Season the chicken breasts on both sides with Salt N Pepper. Heat 1-1/2 tsp of oil in a large skillet over medium heat. Add the chicken to the pan and sear until browned on both sides. (3 Minutes per side)
  2. After the chicken is seared, transfer the chicken to a plate and tent with foil
  3. Reduce the heat to medium, add the remaining oil to the pan. Add onion and garlic and cook for about a minute. Whisk the flour into the garlic and onion until mixed well. Add Broth, Dill, and Lemon Juice to the pan. Let simmer while whisking until slightly thickened.
  4. Return the chicken to the pan, reduce the heat to low and simmer until the chicken is cooked through. (4-6 minutes)
  5. Transfer the chicken to a platter. Pour the seasoned sauce over the chicken. Garnish with remaining dill. (The more sauce you add to the chicken, the more flavor you get)
  6. Serve with a side.
