Strawberry Coffe Cake Bread

Do you ever see the coffee cake’s in the bakery section of the grocery store? They look like the most moist cakes you have ever seen and they are. You will find all sorts of flavors. It’s tough trying to refrain from adding one of those cakes to the basket. Sometimes they are sliced up and screaming for you to take it home.

Strawberries have been on sale the past few weeks and was the inspiration for this Strawberry Coffee Cake bread recipe. Yummy moist slices with a Strawberry topping. Enjoy!

Ingredients

1 ½ cups flour
1 cup sliced strawberries
2 tsp baking powder
½ tsp salt
3 tbsp butter, cubed
1 egg
⅔ cup milk
⅓ cup sugar
½ cup brown sugar
½ cup water
additional, 1 tbsp butter

Directions

In a small saucepan combine ½ cup water, brown sugar, butter and sliced strawberries. Cook over medium heat for 8-10 minutes, stirring constantly till a thick jam is created. Remove from heat and set aside.

Preheat oven to 425 degrees and grease a baking pan, 8×8 works best, with cooking spray.
In a medium sized bowl, combine flour, salt and baking powder. Mix well. In a second bowl add butter, mash with a spoon until creamy. Add sugar and continue mixing. Mix in egg and milk. Add flour mixture to the second bowl and combine.

Pour batter into your greased baking pan. Pour strawberry mixture over the top of the cake batter and then place in the oven for 25 minutes.

The top of the strawberry coffee cake bread will form a hard crust, so use a knife or toothpick to check that the inside of the bread is done. Remove from oven when an inserted knife comes back clean.
